09 Nov Recipes To Keep Your Loved Ones Healthy Through The Holiday
In my most recent newsletter I shared my aha moment about my weight loss. It happened right before the holiday season and I wanted to share 2 delicious dishes that don’t have any leftovers at my family events. These two healthy recipes are super easy to make which your family is sure to love!.
Oven Roasted Beets
3 tablespoons olive oil
1 ½ teaspoons fresh thyme leaves, minced
2 teaspoons sea salt
1 teaspoon freshly ground pepper
2 tablespoons balsamic or raspberry vinegar
Juice of 1 orange
Preheat the oven to 400 degrees
Remove the tops and the roots of the beets and peel each one with a vegetable peeler.
Cut the beets in 1 ½ inch chunks.
Place the cut beets on a baking sheet and season with olive oil, thyme, salt, and pepper.
Roast for 35-40 minutes, turning once or twice with a spatula, until beets are tender.
Remove from oven and immediately drizzle with the vinegar and orange juice.
Sprinkle with salt and pepper and serve warm.
Garlic Mashed Cauliflower
1 medium head of cauliflower, cut into small pieces.
1 TBSP cream cheese
¼ cup freshly grated Parmesan cheese
1 clove of garlic, minced
⅛ tsp chicken bouillon powder
1 teaspoon rosemary
⅛ tsp black pepper
Bring a medium pot of water to a boil.
Add the cauliflower to the boiling water and cook for about 10 minutes or until tender.
Drain well in a colander. Pat dry with paper towels to remove any excess water.
Place hot cauliflower in a food processor.
Add the garlic, cream cheese, Parmesan, chicken bouillon and pepper.
Puree for about 2 minutes or until almost smooth.
Garnish with chives, and serve hot.
